This easy recipe packs lots of nutritious greens plus omega 3’s and healthy protein!
Makes approximately 2 servings
Just one of you not to worry make enough salad for one serving and use 1/2 the lentils store the leftover in the fridge for tomorrow!
Four of you don’t worry just double everything, 6 of you - well you get the idea!

INGREDIENTS:
1/2 cup dry lentils
3 cups of water
2 medium cloves of garlic
1/4 of a red onion (or other type)
1 Tbsp of vegetable bouillon or a cube (we like Better than Bouillon)
Couple large handfuls of arugula and radish tops (yes you can eat them!) or other preferred greens
1/2 of an apple diced
1/2 a cucumber sliced
1/4 c halved or walnut pieces
Splash of Avocado or Olive Oil
Splash of Balsamic vinegar
DIRECTIONS:
Add dry lentils to 3 cups of boiling water in a heavy saucepan. Being to boiling then simmer and cover. The lentils will take about and hour to an hour and a half to cook to tenderness. About 30 minutes into the cooking add diced onions, garlic and bouillon. Once lentils are cooked drain the liquid through a strainer and let cool slightly. While cooling mix in a large bowl greens, chopped apples, cucumber and walnuts and toss with oil and vinegar. Transfer salad to plates and top with a good helping of lentils and enjoy!
