Welcome to Gigs & Grub!

Welcome to my new blog Gigs & Grub! I wanted to marry my two loves music & cooking, and am in the process of creating a multimedia program that will marry both of these wonderful sensory past times.

While the show is in development, I wanted an outlet to share wonderful healthy dishes and some great tunes that can accompany your culinary efforts. I love to cook for people and show them that they can have healthy options without sacrificing delicious flavor!

Check in each week for some delicious healthy recipes accompanied by a playlist to add some groove to your grub! The recipes I post will focus on whole foods that taste amazing, and are good for you!

So to kick this thing off...drum roll...

Simple, Easy and Yummy Roasted Vegetables!

1 medium eggplant sliced 1/4 inch rounds

1 medium sweet potato - sliced in thin rounds

1 medium zucchini 1/4 inch slices

1/2 a large red onion sliced

5-6 small multi colored peppers or 1 medium red pepper sliced

1/4 cup olive oil


2 garlic cloves chopped optional

2 tsps. of dried basil

Pre-heat oven to 350.

Cut all your vegetables and mix eggplant, zucchini, onions, and peppers and put them in a large mixing bowl with a couple of tablespoons of olive oil and garlic, sprinkle with salt and basil. I like sweet potatoes sliced thin so they get crispy like chips and also coat then separately with a tbsp of coconut oil and salt, but you can do everything together. The easiest way to coat them is to just toss them with your hands :).

Spray your baking sheet with olive or coconut oil spray or line them with parchment paper. Put the veggies on the baking sheets in a single layer. Place in the oven and bake for about 10 minutes till they start to soften and brown (sweet potations will get crisp), then remove from oven and flip the veggies. Cook for another 5-10 minutes or till your preferred desired consistency. I like mine browned a bit.

These are great plain for snacks,as a side dish or you can add to greens, pasta or quinoa for a meal!
