Portobello Mushroom & Arugula Salad with a Touch of Fierce Femmes!


I love salads especially in the summer when you just want something light and satisfying! This delicious salad is so easy and fast to make takes only about 15 minutes from start to finish. You will barely have time to whet your taste buds on the rockin’ ladies on this week’s playlist!

Personally I have always been a big fan of all the awesome women making music in the late 90’s/early 2000’s!

Makes 1 serving for lunch (2 servings as a side salad for dinner)

2 of you – double everything

3 of you well that's 1 ½

4 of you double your double etc. etc.

Ingredients

1 1/2 -2 cups of Baby Arugula

2 large or 3 small Portobello Mushroom caps – slice and chop into about 1 inch chunks

2 large garlic cloves – minced (that’s chopped fine but nor crushed)

2 Tbsp. of fresh basil – chopped in small pieces

1 Tbsp. of Olive Oil

2 tsps. of sherry or balsamic vinegar

Salt

1 oz (approx. a Tbsp.) of high quality bleu cheese

Heat olive oil in a medium fry pan. Add minced garlic and basil sauté till lightly golden. Add mushrooms and vinegar. Saute at medium heat till mushrooms are softened and heated through.

In the meantime load some greens onto a plate and crumble your bleu cheese (set aside). Pour warm mushrooms on the greens. Sprinkle with a bit more vinegar (to taste) and top with crumbled bleu cheese!

Option: Prep the mushrooms and salad the night before and reheat the mushrooms before serving. Just make sure to store the greens, mushrooms and bleu cheese in separate containers and keep refrigerated till ready to eat. It’s also a great light dinner!

Why it’s Good Grub?

Portobello’s are hearty yet low in calorie, plus contain fiber, potassium and B Vitamins and other nutrients.

Do I have really have to tout the benefits of greens and garlic? Immune boosting, antioxidant rich, reduces blood pressure, good for your heart etc. etc.

I recommend going organic as much as you can especially on your greens, they are on the dirty dozen, so for maximum benefit keep it clean!

OK I know the bleu cheese, but it’s all about moderation not depravation plus it has calcium! Go ahead live a little!
