Mango Season & Grandma's Recipe + Tune's to Make You Happy!

It's summer so my go to tends to be salads and lighter fare, but being August here in South Florida, it's also mango season and these sweet and delicious fruits are everywhere including my brother's backyard! He came for a visit a couple of weeks ago and brought me bagfuls of organic tropical treats including lots of mangos!

Now I do enjoy the tasty deliciousness of a fresh local ripe mango, so sweet and juicy, but I am not a big fruit eater so there is a limit to how much even I can eat...so what's a girl to do, surely I couldn't have it go to waste! Big brother had a great idea "you can make mango bread" he said, just use Grandma's Banana Bread recipe and substitute mango!

Though it sounded delicious, I had another dilemma I don't do a lot of sugary things and I try to steer clear of gluten (not to mention my BFF who is one of my grand tasting guinea pigs can't have it at all). But what's great about most recipes is you can substitute and tweak ingredients to make them as healthy as possible and still taste amazing so that's what I did.

Dry Ingredients:

Sift or mix your dry ingredients:

2 cups of flour (I have used both gluten free all purpose or almond flour both work great)

1 tsp. baking soda

1/2 tsp. salt

Other Ingredients:

1/2 cup of pureed mango

1/2 cup of organic ghee or coconut oil -- the ghee makes it really buttery, the coconut oil is delicious as well, personally I like a mix of half and half the best)

2 eggs unbeaten (if you want to make it vegan see note about flax seed eggs below)

1/2 cup of sugar (I prefer coconut or organic cane sugar)

1/3 cup of almond milk mixed with 1 tsp. of fresh lemon juice mixed in a small bowl

1/2 cup chopped walnuts

1/2 cup of raisins

Pre-heat oven to 350.

Puree mango in a blender or food processor. With an electric hand mixer cream ghee/oil, sugar. Add eggs. Add Mango and mix all together.

Add dry mixed ingredients alternately with the milk mixture. Start and end with flour.

Add nuts and raisins and mix gently with a spoon.

Take your loaf pan and grease lightly. I like to use an organic coconut oil spray, but a bit of coconut oil spread with a paper towel works fine too.

Pour your batter into the greased pan. Bake in the middle of your oven for 60-70 minutes till browned. You should be able to stick a fork or toothpick in the center and have it come out clean.

Its a great breakfast or snack, add a little fruit spread or organic butter. It also makes a delicious breakfast!

Vegan Option: Flax Seed Eggs:

For each egg, combine 1 tablespoon of ground flax seed (measure after grinding) with 3 tablespoons of water. Stir well, and place in the fridge to set for 15 minutes. After 15 minutes, the result should be a sticky egg-like substitute. A quick and easy egg replacement, featuring freshly ground flax or chia seeds.
