Side Dish or Snack! Cauliflower Popcorn w/ Some Pop Music!
Cauliflower lovers, its time to celebrate this lovely vegetable! Cauliflower Popcorn is delicious nutritious and really easy to make! It an excellent side dish to compliment your meal, but I really love it as a fulfilling healthy savory snack!
Lets not forget the health benefits of veggies overall, but you may be surprised of all cauliflower has to offer. This vegetable definitely deserves a regular rotation in your diet, as it contains an impressive array of nutrients, including vitamins, minerals, antioxidants, and other phytochemicals. One serving of cauliflower contains 77 percent of the recommended daily value of vitamin C. It's also a good source of vitamin K, protein, thiamin, riboflavin, niacin, magnesium, phosphorus, fiber, vitamin B6, folate, pantothenic acid, potassium, and manganese.

1 cup cauliflower florets, chopped into popcorn-sized pieces
2 teaspoons olive oil or coconut oil
Pinch of sea salt
Pinch of cumin
Pinch Cayenne pepper (optional)
1 garlic clove or tsp. of garlic powder
2 tablespoons nutritional yeast or more to taste (personally I love this stuff and its cheese like flavor so I go heavy on it)
Note: Cauliflower can be eaten raw or roasted but I really like the roasted!
Place the cauliflower in a bowl Add the oil and toss to combine. Add remaining ingredients and mix well.
Preheat oven to 400° F (200° C). Grease or line 8 inch square baking dish with parchment (baking) paper. Place the cauliflower in a bowl and add oil. Toss to combine. Add the cayenne, sea salt, cumin, and nutritional yeast and garlic. Mix well. Transfer to the lined baking sheet. Roast for 25-30 minutes, turning cauliflower over halfway through baking time to encourage even browning. Remove from oven and let cool slightly before eating.
