Terrific Tofu Scramble and Songs of the Morning!


Personally I am back and forth when It comes to eggs, sometimes I am really is the mood and enjoy them but often they just don't appeal to me. Recently watching videos about the egg industry didn't help the egg love either.

Anyway this dish is a superb alternative for breakfast or Sunday brunch (mine this Sunday). Its technically a vegan dish, but like many of my recipes I have served it to many non vegans who enjoy it immensely! Its savory and has a bit of an indian flavor to it. I love to add some avocado, the perfect healthy fat, as well as top it with nutritional yeast to give it that "cheesy" taste. Pair it with some rice crackers or whole grain toast for a satisfying breakfast that won't weigh you down!

It also works for lunch or a light dinner, but since I mostly like it in the morning I paired it with some Top or the Morning Tunes! Who knew there were so many - new discoveries yay!

Ingredients:

This should serve two to 3 people depending on the hunger factor. For one person I usually use about a 1/3 of a brick of tofu and halve the rest of the ingredients.

  • 1/4 c. chopped onions (I like the Sweet Vidalia's)

  • 1/4 c. chopped red peppers (orange and yellow work too)

  • 1/4 c. chopped mushrooms (cremini or shitaki)

  • 1/4 c of carrots

  • 1 large clove of garlic

  • 2 Tbsp of coconut or olive oil

  • 1 brick of organic firm tofu

  • 1/4 tsp tumeric

  • 1/4 tsp cumin

  • 1/4 tsp of basil

  • 1/4 tsp of salt

  • 1/8 tsp pepper

  • garlic powder to taste

Directions

Dice onions, garlic, peppers and mushrooms, relatively small pieces. Grate the carrots. Add oil to a medium skillet and heat. Add onions and garlic and saute briefly till they start to soften. Add peppers, and mushrooms and grated carrots. (Optional you can use other vegetables you like or substitute - zucchini and yellow squash work well as does baby spinach (if you use spinach add it when you add Tofu).

Season the vegetables as they are cooking with tumeric, cumin, basil, salt and pepper. Cook until softened. While vegetables are cooking peel and slice your avocado.

When vegetables are cooked through crumble the tofu with your hands and add to pan. At this point I like to mix all together and taste test it. If needed I add a few more sprinkles of the seasonings, if I think it needs it. Depending on the type of pan (I rarely use non sticks anymore due to the chemicals) you may need a little more oil. Cook till tofu heats through.

Serve topped with slices of avocado on top. Optional sprinkle with nutritional yeast flakes or top with hot sauce. Serve with rice crackers, tortilla chips or toast! So delicious plus you are getting tons of nutrition from lots of vegetables, healthy fats from your avocado and all the disease fighting benefits and of the herbs and spices like tumeric, cumin, basil and garlic! What a perfect breakfast!
