Crunchy Salad w Peanut Dressing Mixed w Motown!

Gigs & Grub lives LOL! It has been a crazy couple of months so busy with work, travel, moving and even though I always find time to cook a yummy healthy meals I have been severely remiss about getting my blogs up! The good news is I have continued to document my efforts and now I can back to sharing them with you!

So this week something super easy and super good for you - what I love about this Crunchy Salad is that its loaded with healthy vegetables and stores really well even when dressed since there are not soft greens in it! So you can make a big batch like you do with slaws and eat it for a few days!

Personally I am a huge fan of Peanut Dressing (well peanut anything really) and my favorite is once again from an old Moosewood cookbook! Can't do peanut butter, not to worry substitute almond or cashew butter.

Its quick to make as the the only thing that takes a bit of time is cutting all your veggies. Just take a few deep breaths and treat it like a meditation LOL and this week we are grooving to some good old Motown.

Salad Ingredients:

I don't really have exact measurements for the vegetables as it sort of depends how many you are feeding or how much you want left over. So I'm going to give some approximations here for a salad that serves a good size portion for two (like always just double or triple stuff if you need more).

Baby Bok Choy -3-4 large leaves - use the leaf and harder base

1/4 cup Radishes

1/2 cup Cucumber

1/4 cup Red Pepper

1 cup Cabbage

1 1/2 cups Brussel Sprouts

1/4 cup scallions

1/4 cup Slivered Almonds

1/2 an Avocado

2 Tbsp. Mint

Chop all vegetables into small pieces and add to a large bowl. Add almonds and mix. So Easy! :)

Peanut Dressing:

1/4 cup Creamy Organic Peanut Butter (far and away my favorite is Santa Cruz)

1/2 cup Water

2 Tbsp. Apple Cider Vinegar

1/2 Tbsp. Honey

1 tsp. Fresh Lime Juice

2 cloves Fresh Garlic minced

Hot Sauce or cayenne pepper to taste (optional)

Using a spoon mix peanut butter with boiling water till smooth and fully blended. Whisk together your peanut mixture with all the other ingredients.

Pour dressing over salad, for this amount of salad start with about 1/2 the dressing and add more to taste depending how dressed you like it. For a heartier meal you can add some chopped Baked Tofu (see earlier blog) or even some hard boiled egg.

Top with avocado and mint and enjoy!
