Vegan Broccoli Tomato "Feta" Toss


I created this recipe one night when I was in the mood for some simple mediterranean style fresh healthy fare. This dish is so easy and quick to make as well as satisfying and delicious. This version is vegan and I do suggest going plant based as much as you can. However you could sub in real feta and a different protein if you choose. Its also Gluten-Free and Keto Friendly.

If you are using this as a full meal versus as a side dish, this serves one heartily. If you are combining with some other lite fare, it can serve 2. As always for more at your table or a party, just double, triple etc. as needed!

INGREDIENTS:

2-3 TBSP of olive oil

1 Gardein Chick' n Scallopini

3-4 Cloves of garlic minced

1 cup red onion chopped

2 cups of broccoli cut into small florets

1-2 plum tomatoes

1/4 cup Violife Vegan Feta chopped

1/4 cup fresh basil chopped

1/4 tsp of oregano

salt and pepper to taste

DIRECTIONS:

Take non stick fry pan fill with an inch of water and add Gardein chick'n breast. Heat on medium till breast is cooked through basically you are steaming it. Remove and drain water, then add a little oil to the pan and brown on both sides. Chop breast into bite size pieces and set aside.

Add a couple of Tbsps. of Olive Oil into a medium fry pan. Saute garlic till lightly browned. Add onion saute till softened. Add a bit more oil and the broccoli florets and sprinkle with oregano. Saute another 2-3 minutes. Add tomato, basil and saute another 2 min or so. Sprinkle with salt and pepper and add feta cheese. Toss and heat till feta is warmed. Add chick'n and toss again.

Voila that's it, plate and serve! You could put the whole mixture over a grain or pasta, but I find it hearty enough just by itself. Enjoy and let me know how you like it!
