Rad Ratatouille!

I had almost forgotten about this hearty and healthy french vegetable stew till the other night when I was looking for something new to do with eggplant. It's so easy to make and it works as a full meal or side dish. Plus great leftover options, including a delicious breakfast scramble!



Cooking and music go together much like all these delicious veggies. This is my chill groove playlist to accompany my time in the kitchen. It will keep you dicing, stirring and groovin' till dinner is ready!

INGREDIENTS

  • 3 TBSP of Olive Oil

  • 1 Cup Chopped Onion (I prefer Sweet Vidalia's)

  • 3-4 Cloves Minced Garlic

  • 1 Medium Eggplant

  • 1 1/2 Cups Yellow Squash or Zucchini

  • 1/2 Cup Red Pepper (if you love red pepper you can add more)

  • 1 Can of Diced Tomatoes or 2-3 Fresh Chopped

  • 2-3 Tsp Basil

  • 1/2 to 1 Tsp of Oregano

  • 1/2 to1 Tsp of Thyme

  • 1-2 Tsp Salt

  • 1/4 - 1/2 Tsp pepper


Note: I don't really measure my seasonings I start with less and then I season to taste so feel free to experiment to suit your personal tastebuds.


DIRECTIONS

  • Add 2 Tbsp of oil to a large fry pan

  • Saute on medium heat till the garlic is lightly browned, add onion saute till it begins to soften, stir frequently

  • Add red pepper cook for a few more minutes stirring as you go

  • Add eggplant saute for a 3-4 minutes then add squash, once you add eggplant it will quickly absorb the oil so you can add the additional tablespoon

  • Sprinkle veggies with first round of seasonings (basil, thyme, oregano, salt and pepper). Mix well.

  • Cook till all veggies are softened, taste and add seasoning as needed.


Serving Suggestion:

Ratatouille is delicious with a fried egg and a slice of vegan Violife Smoked Provolone or Follow Your Heart Smoked Gouda on top, making it a perfect meal. You can also serve this as a side dish with another protein (vegan chicken, fish etc.) or on top of pasta or quinoa. So many options all good and good for you! Serves 2+ for a meal and approx. 4 as a side dish.



Leftover Suggestion:

For a delicious breakfast, scramble leftover Ratatouille with eggs and you can also add your favorite regular or vegan cheese. YUMMY!
